Ingredients

  • 1 nori sheet
  • 100g prepared sushi rice
  • 50g Scottish smoked salmon slices
  • 2 tbsp full-fat cream cheese (e.g., Philadelphia)
  • ¼ cucumber, deseeded and cut into matchsticks

Method

Place the nori sheet shiny-side down on a bamboo rolling mat covered in cling film.

Wet your hands and spread the sushi rice evenly over the nori, leaving a 2cm gap at the top edge.

Spread a strip of cream cheese horizontally across the centre of the rice, then top with the smoked salmon and cucumber matchsticks.

Use the mat to lift the bottom edge of the nori up and over the filling, tucking it in tightly.

Moisten the bare 2cm strip of nori at the top with a dab of water, complete the roll to seal, and slice into 6–8 pieces using a wet, sharp knife.
