Ingredients

  • 1 nori sheet
  • 100g prepared sushi rice
  • 60g cooked shredded crispy aromatic duck (from a supermarket Chinese takeaway kit or deli counter)
  • 1 tbsp hoisin sauce
  • ¼ cucumber, deseeded and cut into matchsticks
  • 1 spring onion, cut into thin strips

Method

Place the nori shiny-side down on your rolling mat and cover with an even layer of sushi rice, leaving a 2cm gap at the top.

Drizzle the hoisin sauce in a line across the middle of the rice.

Pile the shredded duck, cucumber, and spring onion along the hoisin line.

Roll tightly using the mat, wet the top border to seal, and cut into 6–8 slices.
